Recipe of the Week (April 10-16, 2011): Pesto Turkey Meatloaf

Boredom does things to a woman. Once it sets in, all sorts of mayhem can ensure. Take, for instance, this recipe. It was borne of sheer boredom. Too many ingredients, too much time, not enough to do = Pesto Turkey Meatloaf. Surprisingly, it turned out pretty good. So well, in fact, that it made its way into my former company’s recipe book and has since received rave reviews. Okay, maybe not rave reviews, but positive feedback for sure!
