Today’s Foodism: Itsy Bitsy Bits of Magic

Jim Gaffigan

A strip of bacon, intact and whole, is a culinary wonder on the plate. Incorporate it into a dish and magic begins to happen. Crumble it into bits and dare to sprinkle it about and you have opened the gates of heaven and all who enter are transformed. Bacon bits—I mean the real stuff, not the hideous, artificially flavored, odd hued, textured soy monstrosity that goes around perpetrating a fraud by masquerading as bacon bits—can wake up any tired, boring dish. Bacon bits make everything better.

Sprinkle a bit of magic in your next dish.
