Today’s Foodism: Get to the Heart of the Matter

True, the artichoke is an odd looking vegetable. And this oddity lends itself to misunderstanding. Although they can be tough when not cooked properly, the leaves are edible. And then there’s the heart. Ahhh, the lovely artichoke heart. Prepared simply with water, lemon and salt, the heart is the meaty reward in the center. Skip the shrimp cocktail … go straight for the heart instead.
