Over the years, you’ve tweaked and adjusted it, modified and fine-tuned it—finally, you’ve hit upon the best way to create your omelette. It has your name inscribed all over it and no one elses, no matter how hard they may try, will live up to your expectations. Sure, you’ll humor others with a tasting or two of their culinary best, but yours … yours … is the one true omelette of perfection. Give yourself a round of applause and dig in. Your omelette is what you make it.
