Today’s Foodism: It Takes a Certain Amount of Appreciation …

Yaks look, well, yakky and rough ‘n tumble. Goat cheese tastes nothing of the sort. Okay, since you forced me, I will admit that goat cheese has an otherwordly bitter earthy flavor that is matched only by its funky and gamy aroma, but it’s far from objectionable to my palate. It is a sorely misunderstood cheese. To each his own, I guess. I have no objection to sharing a country with goat cheese—it’s a vast country, and for those who don’t care for goat cheese … more for me and those appreciative people who think (and eat) like me.

  1. i love the “heavier” cheeses, there are many sheep and goat milk cheeses that have an intese aroma and flavor that i love in certain applications!

    • You know, the great thing about goat cheese is that people who are lactose intolerant can enjoy it with no worries whatsoever — no lactose (or very low). Its the one cheese my husband can eat without taking lactose pills.
