Meatless Monday Recipe for 12-28-15: Grilled Cheese Sandwiches Duo

cheese varieties 2Sometimes in life, you need to take a moment to collect your thoughts, calm your spirit and sink back into childhood–a time when life was simplier, worries were few and grilled cheese sandwiches were a’plenty.

No, I haven’t lost my mind. What I had lost, however, was my connection to my past; that long-ago time when having a grilled cheese sandwich was the single greatest experience to be had on planet earth. I get goosebumps just thinking about it.

For this week’s Meatless Monday recipe, I took a step back in time, and took a little bit of creativity with me. “Grilled cheese sandwiches for dinner?” you ask? “Certainly,” I reply. And when you can ‘adult’ your sandwiches with flair, the really big kid in you that’s been dying to come out willl quickly emerge. Join me as I nosh on a delightful duo: Pear & Gorgonzola Grilled Cheese and Apple & Cheddar Grilled Cheese. Simple to make. Easy to love. Bon appetit!

Pear & Gorgonzola Grilled Cheese

  • Servings: 2

  • 2 ounces creamy Gorgonzola
  • 4 slices raisin bread
  • 1 pear, cored and sliced
  • 1/4 cup spinach leaves (optional, stems removed)
  • Butter, melted

Spread cheese evenly on 2 slices of bread. Layer sliced pears and spinach on top of cheese. Top with remaining bread. Brush the outside of the sandwiches with melted butter.

In a skillet over medium heat, add the sandwiches. Cook for 4-6 minutes per side, until cheese melts.

Apple & Cheddar Grilled Cheese

  • Servings: 2
  • Difficulty: Easy

  • 1 tablespoon butter
  • 1 cup sweet apple (Cortland, Fuji, Braeburn, etc.), thinly sliced
  • 1/8 teaspoon ground cinnamon
  • 4 teaspoons apple jelly
  • 4 slices rustic bread
  • 4 slices Cheddar cheese

Melt the butter in a nonstick skillet. Add the apples and sprinkle with cinnamon, cooking and stirring until the apple slices are golden brown (@5 minutes). Remove skillet from heat.

Divide the jelly and spread on 2 slices of bread. Place 2 slices of cheese on top of the jelly, then top each slice of bread with half of the apples. Finish each sandwich by topping with bread.

Wipe the skillet clean with a paper towel. Add the sandwiches and cook 4-5 minutes on each side or until the cheese melts.
